Crock Pot Beef Stew

You can make this as carby or non-carby as you like, depending on what you put in it.  This is usually my ‘whatever I have in the fridge’ recipe.  The sweet potato is a nice substitute for potatoes, but if you’re strict keto you may want to leave it out.

  1. 2 pounds beef stew meat, (cut into bite-sized pieces)
  2. 1 tsp Salt
  3. 1 tsp pepper
  4. 1 medium onion, finely chopped
  5. 2 celery ribs, sliced
  6. 2 zucchini's, chopped in bite-size pieces
  7. 1 cup bell peppers, chopped
  8. 8 ounces whole mushrooms, quartered
  9. 2-3 cloves of garlic, minced
  10. 6oz can tomato paste
  11. 4 cups beef broth
  12. 1/4 cup liquid beef bouillon
  13. 2 Tablespoons Worcestershire sauce
  14. 1 sweet potato, chopped into bite-sized pieces (omit for lower carb option)
  15. 1 tbsp dried parsley
  16. 1 tsp oregano
  17. 1 tsp onion powder
  18. 1 tsp Xanthan gum
  1. Combine all ingredients in a 6 qt crockpot for this stew. Cook on low for 10 hours or on high for 6-7 hours.
  2. About 30 minutes before serving, sprinkle the Xanthan gum over stew and stir well. Continue cooking covered for 30 minutes.
