B.E.L.T. Salad

Bacon – Egg- Lettuce – Tomato.  It doesn’t get much quicker than this, and sooo keto!  In the time it takes you to cook up some bacon and boil eggs,  you can have everything else ready to go.

Salad
  1. Mixed greens
  2. 4 boiled eggs
  3. 4-6 strips of crispy bacon
  4. 2-3 Roma tomatoes, sliced
Homemade Dressing
  1. ½ cup mayonnaise
  2. 1 teaspoon dijon mustard
  3. 1/2 tsp dried cilantro
  4. 2 teaspoons lemon juice
  5. 3 tablespoons water
  6. Pinch of sea salt
  7. Freshly ground black pepper
Instructions
  1. While eggs are boiling and bacon is cooking, make your dressing
Suggested Accompaniments
  1. Sliced avocado tossed in lemon juice and cilantro
  2. Dollop of guacamole
